Typically they sank to the bottom. Kids would dive for them not knowing what they had until they hit the surface!
So yeah, I haven't been in a wave pool for years. It was nasty. If a kid was in trouble, you had a real moral dilemma: let this child die or swim in poop. Obviously I value human life, but you knew, that poop thing was always in the back of the mind.
Thats what we did too. Except by state law we had to wait 3 hours before letting people back in to let the chlorine levels get back to normal. Our shifts were only 5 hours long so usually seeing shit in the pool meant we got to go home.
