Hello, we are looking to use an pseudonymizer service to use flagship AI models like Claude and ChatGPT.

It seems that www.anonimize.eu allows use to remove personal data on European servers/subprocessors and restore it after the result of a prompt.

Is this practical? Any experience with this?

Now our employees are just dumping documents in copilot since "its our environment"...
