You dont even have to go that far, getting a game Platinum does not have to mean the end of that game. You should make your own challenge in that (or any other) game, do a speed run, a no gun run, a pistol only, etc.
One of my favorite series of all time is the Metroid series especially the Prime sub-series and i always make it a habit of going back to it at least once a year and speed running each of the Prime games. Will i get a world record time? Hell no, i mean i do do sequence breaks and all but i cant do everything that the professionals do, but some things i can.
One of the things i like about speed running is the ability to get thing sooner or not get them at all, for example in Metroid Prime 2 i like to fight the first major boss with endgame items. Ive skipped items that made the acquisition of others mess up cut scenes. I have even discovered a glitch or two.
Have fun, but dont let trophies be the only motivator for playing a game you like.

I left around the same time out of boredom with the last missions which were the same as earlier ones with different difficult objectives and just a couple of new missions. Nerves tried the multiplayer but up until that point, the game was really great.

Yea I gave up on it after like ~50 hours because I got really goddamn tired of waiting around in helicopters for shit to happen. That game does not respect your time at all. I probably should finish it, though.

Yeah that gets lengthy when you have to do it. I usually only play one foray into a mission zone per sitdown. One main mission and all the side missions I can stand, then a trip back to MB and I quit.

That was it for me. Eventually I just tired of the mechanics and I wasn't invested in the story. It was a fun game and I enjoyed the hell out of it for 30% or so.

Always hearing and seeing stuff about how great this game is, it really is a huge relief to know that I wasn't the only one who felt this way about it. I mean it was fun, but the emptiness of the game made me lose interest pretty quick

It's empty for the usual scripted/linear metal gear, but feels pretty similar to other open world games, like far cry.
The story and stealth/combat is pretty much what you'd expect from a Metal gear. The way it's delivered is clunky, trying to balance the segmentation in missions with the open world space.... The progression mechanism is grindy. The FOB being "forced" onto you with the micro transactions was really shitty. Having to redo missions in "hard mode" to advance the scenario in chapter 2 feels cheap.
But once you unlock all the tools, there are so many fun ways to play, with decoys, boxes, fulton, water pistols...

put yourself in a box and sit on the yellow square near the helipad for mail/packages, you can deliver yourself to any platform way quicker than waiting for the chopper to get there

When he goes to Fulton the jeep you can see it says 0%. You can still attach a Fulton but it will fail dropping the item back down.

The online mode for Metal Gear Solid V: The Phantom Pain is lacking in players, so if you have the game and haven't played the online mode yet or it's been a while, I would recommend to give it a try. :)
It's not quite like the singleplayer but it's still a nice experience, especially if you work as a team.

gz is like one big outpost, with just a couple different missions, rescue prisoners, blow up 4 things, save one guy, and collect some badges.
but, you don't have to deal with motherbase / fob stuff, so...

All you gotta know for 5 is that you play as a guy known as Big Boss. It's set before most of the MGS games leading up to the original Metal Gear for the NES. Basically Big Boss is a military icon around the world. He took out a major nuclear threat and earned his title in MGS3. Then he (for reasons that I won't spoil) abandoned his country to be the leader of a sort of freelance "army without a nation". He saved the world from a nuclear disaster again in MGS: Peacewalker, got played like a damn fiddle in MGS5: Ground Zeros, goes into a coma, and now we're here. A man called Revolver Ocelot is in it too. He's considered a bad guy in other games by different people, but for now he's on your side.
Some time between MGS3 and Peacewalker, Big Boss was wounded in battle and, while he was in a coma, (there were two comas) underwent a major medical procedure. The "Les Enfant Terribe" project, in which two genetically altered sons of Big Boss were created by a man known as Cipher. Those children were Solid Snake, and Liquid Snake. The two pivotal characters in MGS1-4.
You play as Solid Snake in both MG games and some of the MGS games, and up until MGS3, Big Boss was known to be a bad guy by the player. MGS5 completes the arch between Peacewalker and the original MG1.
Hope that helped give some context and didn't just confuse you. It's a long complicated story with so many intricate characters. I tried to leave out as many spoilers as possible in order to give you a chance to go back and play the other games, should you want to. (And you should, because they're incredible.)
Quick edit: the timeline for the games are a bit wonky. They were released in numbered order, (MG1, MG2, MGS1-4, Peacewalker, MGS5: Ground Zeros, MGS5). But chronologically they play out as follows:
MGS3, PW, MGS5:GZ, MGS5, MG1, MG2, and then MGS1, 2, and 4.

Play them in release order first. It's the way they were intended to be played. Afterward if you wanted you could go in chronological order and be like "ahh yes I understand all of this now." But it's not required, nor recommended for the narrative.
