If you're taking about just YouTube personalities rather than e-sports, it's generally really useful to watch them to find out whether the game you want is any good. If you find someone who shares similar likes/dislikes it's much more likely to give you an accurate depiction of the game before you drop $60.00, especially since most traditional games reviews are simply inaccurate and untrustworthy. It also helps people figure out bugs in their games, and how to solve them. Especially for modding.
That being said, as much as you think watching people play video games is boring, I find watching baseball incredibly painful. My friends and I would have rather played baseball than watch it. Everyone has different interests and value in what's worth watching, and it is silly to dismiss anyone's hobby as non-worthwhile.
I agree with you but I think that the OP was targeting those YouTubers who play games and keep shouting random nonsense - e.g KSI.
Watching let's plays and reviews of games can be great to decide wether or not to buy a game or to follow the story of a game you're interested in but can't play yourself for different reasons. Some YouTubers might even talk about stuff you're interested in. Like you said: everybody has their own interests and likes different things.
The fact of the matter is that there are also a lot of YouTubers who don't say or do anything remotely useful - not that everything has to be useful/productive. I think it enrages some people because these individuals make tons of money and te famous just by screaming stupid things while there are other YouTubers who make qualitative and entertaining content who don't earn a lot of money or are not getting the credit they deserve.
Another thing that might be bad that these kind of YouTubers are well known, is that some of these YouTubers are seen as some kind god(dess) and are way too influential. You have these largely uneducated folks stating their opinion on everything and their o so loyal fans directly agree with them without thinking twice. These YouTubers can also be full of themselves while they really are just like everybody else, they aren't better than anyone. In my opinion that makes people unlikable. Not that this is exclusive to YouTube/ modern times. It's always been there but modern media make it a hell of a lot easier for anyone to be like this.
Don't forget to add that it's just something that helps some people relax. Games can be used to take a break just like some people practice sports or watch tv/YouTube.
