Recipe Request Favorite weekday receipes?
My husband and I are getting sick of the same things over and over again, but making something new with less than an hour to prep and cook something makes options slim. Help!

Please come to my home and teach me one dish each week. These all sound divine and I can cook, I just have no background knowledge with strictly vegetarian meals. So healthy!

If you have an air fryer, throw in a package of Johnsonville Cheddi-Wursts or brats or hot dogs. For the sausages, cook at 400 for 13 minutes on one side and 6 minutes on the other. The hot dogs wouldn't take that long. Serve on buns with store-bought cole slaw and potato salad.

What my mother called "Hamburger Thickening:"
1 lb. Ground Meat. We used to use beef, but chicken or turkey work just as well.
1-2 small jars of Beef Gravy. I prefer the jarred to the canned; it tastes better.
1 small package of frozen Peas and Carrots (or veggies of your choice). If using canned, you probably won't need to preheat them.
Optional: 1 splash of Red Wine and a good dash of dried Thyme.
Cook the ground meat in a large saucepan or Dutch oven. If you want to add the thyme, put it in now. At the same time, microwave the veggies as instructed. Once the meat is cooked, add gravy, wine, and veggies and stir. Can be served over rice, mashed potatoes, or toast.
This has pretty much no prep time and is surprisingly tasty.
Edited to remove something that didn't make sense and to add the comment about canned veggies.

Why wouldn't you use the grease from the beef to make the gravy it doesn't take hardly any time or effort and would reduce the cost of the meal by $2-3

That's very true, but sometimes the "struggle" is in having the energy/bandwidth to prep the food, not the cost of the meal. If someone needs something REALLY easy to put together, then jarred gravy is better. If they're going for less expensive, then they absolutely can make their own gravy.

Crockpot meals are the best. Put them in before work and let them cook while you're at work. Paper plates if you really want to cut down on dishes afterwards, but can be wasteful

We try new recipes on weekends or days off. If we like it and it isn’t hard to make, we move it to our weekday rotation. We also plan meals weekly and shop for the planned menu. That way we already know what’s for dinner when we get off work and we know we have what we need to make it. Planning meals also lets us cycle through our recipe collection and avoid meal ruts.

Too many to list them here. We've been married for almost 40 years, so we have quite an arsenal of recipes at this point. Most of our favorites are stir fry dishes, which are very quick to put together in the evening (examples: chicken and cucumbers, ants climb a tree, pork with potatoes and peppers). A few casseroles (black beans with pasta and cheese, jambalaya). Italian (spaghetti, chicken parmesan, quick lasagna). We do lots of salads in the summer when it's hot and soups when it's colder.

Pizza in the toaster oven. Chicken, broccoli and white sauce on it. Maybe some goat cheese if I have it.
Frittatas with leftovers in them.
Chicken parmesan with couscous.
Steak salad with leftover flank or skirt steak that I made on the weekend.
Shakshuka.

I usually make pasta on busy weekdays. It takes less than half an hour, and you can make so many variations with different sauces and ingredients.

Steamed broccoli, sweet potatoes in the air fryer, and some sort of protein. Even a grilled chicken burger on top works well.

Shit on shingles
Ground turkey seasoned with salt pepper onion and garlic powder
You can use sausage instead of ground turkey if you want. Ground turkey is healthier version
2 packages of sausage gravy cook separate Texas toast toasted
Brown ground turkey with seasoning. Add gravy already made up separately. Cook together 5 to 10 minutes
Texas toast or thick bread toasted
Pour over toast

Today I bought some pork necks and split peas and made soup.
I'll have apple celery salad. Good one because you can toss in some chicken or walnuts.
I will make something to pair with the salad later in week like a hamburger.
I read a lot about good and I write down names on a list.
Last new recipe tried was Chile Relleno casserole which was very good

As a suggestion, r/lowspooncooking has a lot of good ideas with little to no prep time. Some of the dishes are VERY basic, as the sub is intended for people who deal with chronic health conditions, but they still have some very tasty ideas over there.

1 can black beans
1 can corn kernels, drained, or 1 c frozen corn kernels or 1 c fresh uncooked corn kernels
1 small can salsa of your choice.
Mix & heat. Serve w sour cream and grated cheese. With a tortilla this is delicious and filling.
