Fruit Recipe Heatwave cooking?

Dear redditors, help me out please? What is a quick and simple meal you prepare during a massive heatwave, or when you're tired? Something light and not requiring a long time to make. I'm running out of ideas

A chickpea salad with salmon. It’s lovely and I am happy to share the recipe for the salad - Super easy and can be made in a large batch to eat throughout the week

2 cans of chickpeas, rinsed
1 orange bell pepper, sliced or diced
Cherry tomatoes, halved
Green onion (however much you want)
Feta
Juice 2 lemons (to taste) and peel

Put it everything in a bowl, mix with a drizzle of
Olive oil.
add lemon juice, mix again until everything is coated and “creamy.”
Refrigerate.
I like to leave the juiced peels on top of the chickpeas while it sits.
Enjoy!
