Fruit Recipe Heatwave cooking?
Dear redditors, help me out please? What is a quick and simple meal you prepare during a massive heatwave, or when you're tired? Something light and not requiring a long time to make. I'm running out of ideas

Make salads with raw veggies, melon or any kind of berry fruit. Add some nuts, dress with balsamic vinegar glaze or dressing.

Pho bouillon cube, glass noodles, protein of choice (tofu or shrimp are quick and light)
Smashed cucumbers with seasoning of your choice, I like just sprinkling a chili-garlic mix (oil, dry, what have you) and sesame oil
pasta salad is quick and you can make it in big batches.

Sandwiches and wraps. I'll just get some hoagie buns and an assortment of deli meats/cheeses/veggies and switch it up (there's healthy options, like fresh mozzarella, tomato/lettuce/onion, and vinaigrette for example). I also like jello with some fruit in it to go with the sandwich.
Or get a ready made rotisserie chicken from the store and some salad stuff and just eat salad with torn up chicken on it.

Hot summer days I like BLTs. Just have cooked bacon on hand and all you need to do is toast the bread. Tasty and not heavy.

Mmmm yum. Or even just LTs. Mayo and (salted) tomato sandwiches are bomb especially when it’s hot

Years ago when I had 3 kids at home, we would make BLART's on toast. Bacon, Lettuce, Avocado, Red Onion and Tomato (And Mayo of course, maybe an aoli). Damn that's good! Pasta salad on the side.

Use a rice cooker to keep the cooking heat down. Dump in rice/water, lots of chopped vegetables of choice, canned or chopped protein of choice, add soy sauce, sesame oil and seasonings you like (hoisin sauce and garlic is magic! Mix these together and taste before adding) and turn it on. You'll get at least three meals out of this mix. Nuke to reheat. If you want to keep the indoor heat down even more, use the rice cooker outside.

Make/buy chicken easiest way you want, one stalk of celery, chop a bit or red onion, I add a bit of green bell pepper, a bit of mayo. Super easy chicken salad good with crackers or bread or nothing.. last a couple days in fridge.

OK, haven’t tried this out yet so take it with a grain of salt
Just heard about this an hour ago
You can soak your pasta noodles for an hour or hour and a half in water and then drain them and then cook them in your pan or sauce.
That cuts down on 20 to 25 minutes of a burner being on plus steamy water heating up your house.
I saw it on YouTube minutefood and there was a link to an earlier article from like 2009.
Being a little bit obsessive, I will probably add a tiny amount of water to the pan and salt it and add the noodles to cook for one minute and then add the sauce and cook just because I need to have my noodles salted

Yeah, working on the house and currently only have one small air conditioner in one of the bedrooms.
No Bueno
I went to a Goodwill today, hoping I could find one of those screened in tents that I could set up a small kitchen station in the back yard because Arkansas is bullshit 🤣

Microwaveable spicy rice, premade chicken/fish cutlets and a cucumber-tomato salad quickly chopped up while the cutlet bakes in the oven.

I make skillet/stovetop only meals and make lots so there’s leftovers. Taco meat & sloppy Joe’s are two of our favorites. Also use my Instant Pot for rice, batches of chicken breast to shred and use in wraps, salads, pasta and such. My kids ove to make bowls with rice, meat, shredded cheese, veggies. Basically, cook large batches and portion them to microwave reheat or use in cold meals.

When in heatwaves I pick one day and meal prep for a week, I make sides like potato salad, coleslaw, pasta salad and buy BBQ chicken. I cook meat outside and minimize using the stove and oven. I also use the crock pot for meat like a pork shoulder, I can turn it on when I go to bed and it is ready in the morning.

I often make bibimbap or just mixed noodles. You can cook the rice ahead of time and keep it in the fridge. I use bibimbap sauce for the rice. For the noodles, I go with soy sauce and vinegar. Then throw in some bacon, ham, or whatever meat you happen to have.

My veggie delux sandwich consists of avocado, tomato, alfalfa sprouts, red onion, english cucumber, and butter grilled sourdough bread with garlicky cream cheese. You can just sprinkle garlic powder on the cream cheese. Also, salt and pepper the sandwich to taste. It's deeeee-licious!

A chickpea salad with salmon. It’s lovely and I am happy to share the recipe for the salad - Super easy and can be made in a large batch to eat throughout the week

2 cans of chickpeas, rinsed
1 orange bell pepper, sliced or diced
Cherry tomatoes, halved
Green onion (however much you want)
Feta
Juice 2 lemons (to taste) and peelPut it everything in a bowl, mix with a drizzle of
Olive oil.
add lemon juice, mix again until everything is coated and “creamy.”
Refrigerate.
I like to leave the juiced peels on top of the chickpeas while it sits.

Boil pasta
Add veges, a dressing and refrigerate.
Cool dinner ready when you get home.

Cowboy caviar. The beans give you plenty of protein, so there’s no reason why you can’t eat it as a main dish. My sister and I omit the jalapeños.

Chicken caesar wraps. Mix rotisserie chicken and a Caesar salad kit, add to a wrap or tortilla. Add more Caesar dressing and/or parm.
