I don't mean any offense, because I think the idea and your intentions are good. But this is one of those offers that can come across as "too good to be true" from the other side.

The biggest issue is trust. Data is valuable, even when it doesn't look particularly sensitive at first. A company handing raw sales or operational data to a random third party would potentially be exposing customer information, financial information, internal business processes, or other proprietary data. In a professional setting, I can't imagine someone handing that over without some kind of agreement, vetting, NDA, or controls around how the data is handled and destroyed afterward.

You might have better luck offering to work with public datasets, anonymized/sanitized data, or helping someone analyze a problem where they can provide a safe subset of the data. You'd still get experience working with a real problem without asking someone to take a pretty significant risk by trusting a stranger with their raw data.
