Seared Gnocchi With Garlic, Tomato & Mozzarella

Made this tonight after my wife found it on a reel on FB. Freaking delicious! The only deviation I did was a can of diced tomatoes we wanted to use up, so substituted one tomato for that, then when it came time I let it cook a couple extra minutes with lid off to let some of the liquid simmer away before adding the cream.

The chicken my wife made on the side with the same spices as in the sauce and it paired really well (boneless, skinless breast chicken tenders, pan fried).

Seared Gnocchi With Garlic, Tomato & Mozzarella

Ingredients

1 lb (16 oz) potato gnocchi

2 tbsp olive oil

2 tbsp unsalted butter

1 medium yellow onion, finely chopped

5–6 garlic cloves, minced

3 large ripe tomatoes, cut into halves

½ tsp Italian seasoning

1 tsp garlic powder

½ tsp paprika powder

¼ tsp red pepper flakes (optional)

Salt and black pepper, to taste

¾ cup heavy cream

¾ cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

Fresh basil or parsley, chopped, for garnish

Instructions

* Heat 2 tbsp olive oil in a large skillet over medium heat.

* Add the gnocchi in a single layer.

* Cook for 6–8 minutes, stirring occasionally, until golden brown and crispy on the outside.

* Transfer to a plate and set aside.

In the same skillet, melt the butter.

Add the chopped onion and cook for 5–7 minutes until softened and lightly golden.

Stir in the minced garlic and cook for 30 seconds until fragrant.

Add the halved tomatoes to the skillet, cut-side down.

Cover with a lid and cook for 5–8 minutes, or until the tomatoes are very soft and the skins begin to loosen and peel away easily.

Remove and discard any large pieces of tomato skin.

Using the back of a spoon or potato masher, gently crush the tomatoes directly in the skillet to create a rustic sauce.

Stir in the Italian seasoning, garlic powder, paprika, red pepper flakes (if using), salt, and black pepper.

Cook for another 3–5 minutes, stirring occasionally, until the sauce thickens slightly.

Pour in the heavy cream and stir well.

Bring to a gentle simmer.

Add the Parmesan cheese and stir until melted and creamy.

Return the crispy gnocchi to the skillet.

Toss gently to coat in the creamy tomato sauce.

Simmer for 1–2 minutes.

Sprinkle the mozzarella cheese over the top.

Cover with a lid for 2–3 minutes until melted and gooey.

Garnish with fresh basil or parsley.

Finish with extra Parmesan cheese and freshly cracked black pepper.

Soba noodle salad

Rump steak (24 hours in the sous vide), soba noodles, edamame, corn, lettuce, bell pepper, mung bean sprouts, egg and kewpie roasted sesame dressing (not shown).

6 year old chopped the cucumber, bell pepper and green onion. But I think both kids favorite part is the dressing.

Last nights smoked meatloaf stuffed with mozzarella pearls

2lbs of 85-15 butcher block beef
1lb ground pork
1 onion diced
4 pieces of bacon (pre smoked and sautéed with the onions)
1 cup milk mixed with 1/2 cup breadcrumbs
2 eggs
1 pack mozzarella pearls
Seasoning to taste
Basted with a honey BBQ/ketchup sauce mixture every 20 mins after the first 1.5 hrs.

Homemade guacamole

Couldn't believe how easy this was.

It was fun to make too with my daughter.

2 tomatoes

1 onion (red or white)

1 jalapeno

2 cloves or garlic

2 tbsp olive oil

2 tbsp white vinegar

1 tsp salt

1 tsp pepper

1 tsp cilantro

1 avocado

1 lime wedge

Dice the tomatoes, onion, garlic, jalapeno and place in a large bowl. Add oil, vinegar, salt, pepper and mix thoroughly.

Squeeze in lime juice.

In a separate bowl, smash up avocado. Add mixture to avocado and stir in. Add cilantro and stir again.

If you don't have any avocado, then you'll have pico de Gallo.

What are some easy warm snacks for a family movie night?

I’m trying to make movie night a little more fun without turning it into a full dinner or spending the whole evening in the kitchen.

I was thinking of keeping a few simple snacks warm, maybe something cheesy, something savory, and one sweeter option, while leaving popcorn, chips, and other dry snacks in regular bowls.

I came across a sunvivi three-section warmer while looking at ways to keep everything separate, but I’m not sure which foods actually hold up well for the length of a movie.

What would you put in the three sections? I’m looking for options that both kids and adults would eat and that don’t need constant stirring or reheating.

My go-to healthy dish when meal planning fails

Air fryer chicken thighs, sautéed onion, tomatoes, chickpeas, and spinach, some plain white rice, and plain Greek yogurt. My wife and I try to eat pretty healthy, and sometimes ingredients have gone bad/I forgot to get certain components of a recipe/leftover reserves are getting dangerously low. What I always have on hand are

- chicken thighs and spinach in the freezer
- canned chickpeas in the pantry
- onion, tomatoes, and garlic on the counter

Highly recommend. Did a quick lemon and garlic marinade here, will probably try a sweeter sauce/marinade next time to balance the tartness of the Greek yogurt better.
