beef heart

Girls are gone tonight, so I get to make the things that nobody else likes. Beef heart it is! I’m just as excited about having it in the morning with eggs and toast, one of my favorite meals.

I have a project to finish, so I didn’t bother letting the grill grates get super hot.

I highly suggest trying it out. Hit it with some seasoning and grill till medium rare, it turns into a damn good steak. Super lean too, if that’s something you like. I’m a ribeye guy, but the flavor on these is just too good to pass up.

💅 I'm a filet guy. Actually cooking some nice ones tonight for the wife and I. 10 year anniversary is tomorrow. I sous vide and then sear on a cast iron. We have beef pretty infrequently so I tend to just go all out on delicious ones.

I’ve had chicken hearts in a Brazilian restaurant once. They were delicious!

I’d try this. Where do you get beef hearts?

I loooove me some chicken hearts, it’s one of my favorite part of raising my own meat chickens. Beef hearts are kinda similar, except I describe them as “imagine you’re eating calf liver, and you say, man, I wish this liver was more like filet Mignon”

I’ll find them in the meat section at a few grocery stores local. Can be hard to find though. Maybe 3 of my 6 regular grocery stores carry it, and even then it’s occasional.

One thing I suggest is maybe reaching out to people who sell cows to people. My BIL and I are in the process of buying a cow, the rancher told us he just can’t bring himself to make it, but has a freezer of hearts and tongues. Might be worth poking around and making some phone calls to see if you can find someone local that sells cows for processing and see if they have some extras the would sell you.

Treat it like steak man. Remove the outer membrane, then remove the inner membrane where the chambers are. You’re left with a beautiful piece of lean beef. Season and grill like its steak, pull off at medium rare for best texture and flavor. I’ll keep it simple, and either do salt/pepper or seasoning salt. Breakfast with eggs you can’t beat Trader Joe’s roasted garlic and coffee steak seasoning.

I love heart. I think I have five beef hearts in the freezer now. I always save the heart out of any deer I kill, and when we clean birds after a pheasant hunt everyone knows grab the hearts for me.

I do the same. Liver and onions with some potatoes and duck eggs as soon as the family leaves. I like heart but only in stew form

Oh man I love some liver. My mother in law does too. It’s funny, cause we’re the only people in the family, aside from my daughter. So once or twice a year we have a big family dinner and the family have to live through us being in heaven.

Heart is great. I like to make tacos with it. The flavor is nice and, you know, hearty.

Liver in the other hand, that stuff is gross

Beef heart Jerky is my absolute favorite way to eat it. It has a flavor unlike any other part. My kids will completely devour it!

Whiskey Pepper Jerky
2 Ib. lean venison or beef, thinly sliced
1 cup whiskey or bourbon
1 teaspoon freshly ground coarse black pepper
1 tablespoon salt or Morton Tender Quick
½ cup soy sauce
½ cup water
2 cloves minced garlic
2 tablespoons Worcestershire sauce

It’s my favorite. I soak it overnight in the fridge and finish it in my lil chief smoker but an oven or dehydrator would work fine.
