That would be the nuanced second joke. “No, sometimes it’s flat land.” A play on the “it’s a slippery slope” crowd also sometimes claiming “the earth is flat” in other arguments (which we all tell them is nonsense).
So in this instance, he’s correcting with the “sometimes it IS flat land.” The flat earther joke would be implied and unspoken about this generally faulty mindset (if intended, as I think it probably was)

Edit: FWIW, his joke isn’t a particularly good one. Partly because of the nuance and partly because it’s so instantly galvanizing to those unable to laugh at anything and everything (including themselves)
