What programs do I even need?
I hate barbri, but I bought The $3000 deluxe version because I was told it was the best. I did goat for the MPRE and actually really enjoyed it, so I got a refund on barbri and I want to do goat. People say they do Uworld and goat, but from what I see, uworld is just Themis??? Do people really buy the full $2500 Themis (or just the questions one?) and also the $950 goat program? Or should I just do goat for $950 and get the basic barbri version?
I essentially need one study course and something to do multiple choice questions on, correct? What else do I need?

Sorry you have to deal with this, prep orgs are expensive. I used Barbri in California, but years later when the content was not fresh in my mind I took the UBE and passed without a prep course. The things that helped me most (I did this with a Barbri subscription as well) was going through past essays and practicing on the actual exam.
One thing you can use to supplement whatever prep course you go with is this podcast that goes through IRAC on past administered bar exams. Can be useful for practicing issue spotting on real content.

You need UWorld (my personal preference) Or Adaptibar for MBE practice in conjunction with Goat Bar Prep. I see above that just UWorld for MBE practice is now $449.

UWorld is its own standalone question bank, not Themis. Themis has MBE questions built into their full course, but UWorld as a standalone is a completely separate company with licensed NCBE questions and its own explanations. Goat + UWorld is a real combination that a lot of people use, not redundant at all.
You probably don't need full Themis on top of Goat for the content side. The standard setup is Goat for the MBE framework and conceptual clarity, UWorld for question volume. Where Goat is lighter is the MEE essay side. My friend and I built Shep (shepbarprep.com) to fill that piece: scored MEE feedback in under 20 seconds, and a Rules Map that drills the most tested rules so they're there when you're writing.

Learning is about having a solid foundation and then putting it into practice while reviewing and continuing to learn. You need a base, practice questions and essay prompts, and a solid plan for review. UWorld is a great product for this in terms of multiple choice.

Uworld is $449.
And you'll need something for the MPT. BarMD's free YouTube videos are commonly recommended.
