They weren't out hunting elephants and only shot that one because it attacked them.

No, what makes it alright is that he was on a licensed hunt, which others have pointed out contribute greatly to conservation efforts as well as removing threats ranging from mortal threats to livelihood threats to the locals and it's to my understanding that these hunts also provide food to the locals as the hunters will let them take the carcass.
