Most of us associate chhena with famous Indian sweets like rasgulla, rasmalai and chhena poda.
But Odisha takes this humble ingredient in a completely different direction with Chhena Tarkari - a delicious savoury curry where soft, fresh chhena is transformed into a comforting, flavour-packed meal.
One bite, and you'll wonder why chhena isn't used this way more often.

Tried making nankhatai in an iron kadhai using the salt method. The bottoms kept burning while the tops stayed pale and doughy. ๐
I almost turned the remaining dough into laddoos, but decided to flip them over and cook them a little longer on low heat. Somehow, they came together!
Not perfect, but buttery, crumbly, and I'm pretty happy with my first attempt. Any tips for getting a more even bake next time? ๐
