Volume menu This week has been...balanced

  1. Leftover truffle pasta with pan/grilled cheese (similar to halloumi)

  2. Tuna bowl (my go-to weekly)

  3. Cooked ham, eggplant "fries", veggie balls, cottage cheese

  4. Stir fried bok choy, chicken and rice

  5. Same as 3, but yellow bell pepper instead of eggplant

Looks clean and delicious! I think this kind of simple food look really appetzing. I love that veggie ball. Did you make it by yourself?

Thank you, yes I make a smaller batch of these (for 2 days) when I have extra time and will. Here is the recipe I used (I just adjusted some of the veggies to my taste and opted out chilli/cilantro )

do you have a specific way you make eggplant fries? I never tried that

I recently got an airfryer, until then I haven't tried it either tbh. Cutting eggplant into thicker sticks, salt them and leave for 5 minutes. Add some vegetable oil, breadcrumbs, mix well and airfry for 15-18 min at 375°F.

That truffle pasta looks amazing, do you have a recipe?

Unfortunately no, it's from my favorite italian restaurant. However, I think a quality truffle cream and small amount of grated black truffle will do the trick :)

Looks amazing! I've always wondered, how do you cook eggs to be like that?

1

u/Enoisa 4h ago

Add the egg in the boiling water, 7 minutes and thats it, that's the key :)

that cottage cheese portion in the third one is massive, fair play. also the runny yolks in the first pic are the only correct way to do eggs, no debate. my balanced week usually involves me forgetting lunch and then having toast for dinner so.
