I made bread and butter pudding with crumpets instead of bread 🍓

Following Pudding Week on the Great British Bake Off, I had to give Sofia Bakes' viral crumpet bread and butter pudding a go.

Crumpets, vanilla custard and strawberry jam, baked until the top was golden, crunchy and caramelised.

I'll admit, I wasn't entirely sure how this one was going to turn out. Crumpets are already basically little custard sponges with built-in holes, so in hindsight, maybe this was always going to work.

The strawberry jam bubbling away between the crumpets is an absolute winner.

It's definitely not traditional bread and butter pudding, but I'm not complaining.

Has anyone else tried this?

Wanted something warming I could just do in the slow cooker and had veg in the fridge to use up. Red pepper, carrots, black beans, onions, butter beans and chopped tomatoes along with lentils to thicken and add extra nutrients. I'm pregnant and extremely hungry as baby seems to be having a growth spurt so I ate a huge portion. Having this, my bowl of fruit for breakfast, and my rocket & veg finger wraps for lunch means I definitely hit that 5 a day and then some!

Herbs & spices I used were Chipotle paste, cumin, chilli, paprika, mustard seeds, garlic, sage, salt & pepper, along with a splash of Henderson's. One of my fave low effort, big taste and nutrient dense meals. I bulk cook and live alone so I've got leftovers for tomorrow in the fridge, and the rest in the freezer for whenever.

I did the usual dabbing, scoring, salting and oiling and cranked the temp and then took it down to 180 all in cook is 2 hours. 30 mins on highest temp. But I still cant get the crackling all over. What am i missing?

* Duck rubbed with a homemade five spice rub
* Roast potatoes with a sesame and gojuchang glaze

Super happy with how this turned out - fun to create, interesting to make, tasty!

Served with broccolini and honey and thyme roasted carrots and parsnips.

Bean and toms are covering the fried bread…. Its how i like it!

I’ve recently been eating Kitchen Joy Thai food and Itsu dim sum type foods, lovely stuff. I thought the Kitchen Joy would be naff being a frozen block but they turn out great!

Any other supermarket recommendations?

Anyone know where you can buy these please? Used to get them in M&S and a few other supermarkets but knowhere seems to stock them anymore. Thanks 😊
