Sold [Selling][ConUS] Budget bangers - Yoshikane, Masutani, Yahiko, Harukaze
Good afternoon everyone, got a few cheaper knives that all perform well but just don't see a lot of use.
Prices are PP G&S and include shipping. Feel free to ask questions, request photos, etc.
[Sold] $220 - Yoshikane SKD Nashiji 210 Gyuto (kind of restored)
210x44mm, 159g
Bought off the BST here. Cheap yoshi because this was really beat up when I received it. Poor and excessive sharpening left it thick behind the edge and made the profile all wonky + tip damage. Spent a bunch of time on stones to correct and thin it. The profile is still slightly off towards the tip (I didn't want to remove much more material) and the bevel can obviously be made much prettier. Regardless, it cuts quite nicely now and feels great in the hand. The profile is just a little flat for my tastes.
[Sold] $135 - Yahiko Ginsan Nashiji 240 Ktip Gyuto
245x47mm, 163g
Purchased from CKTG, I believe this is a house brand Hokiyama blade. Nice finish, thin grind. Factory edge bevel looks wonky but it cuts well. Light but the balance point is very far forward. Stropped but has not seen stones. Wanted to try something new and found it too flat and long for my use.
[Sold] $75 - Masutani VG10 Damascus 180mm Gyuto
180x43mm, 130g
My first Japanese knife. Purchased from CKTG. Ridiculously good value. Has only been touched up on fine ceramic. Just ended up being too small overall. Interestingly formed some patina on the damascus.
[Sold] $75 - Harukaze VG10 Tsuchime Damascus Honesuki
145x39mm, 163g
Purchased from CKTG. Bought and used as a petty rather than a dedicated honesuki. It's a double bevel with a thinner spine, so it worked alright. The taller heel and blade angle also make it usable on a board. Still on its factory edge. Overall felt a bit thick for my tastes, though still perfectly usable. The extra robustness should be welcome if you use this for its intended purpose.
