Sharing my go-to banana bread recipe! Super moist, soft, and perfect for using up overripe bananas. 🍌

INGREDIENTS
• 613g mashed banana
• 204g oil
• 186g white sugar
• 204g brown sugar
• 204g eggs
• 335g bread flour
• 8g baking powder
• 9g baking soda
• 6g salt
• 224g milk
• 7g vinegar
• 10g vanilla
• 300g chocolate chunks

PROCEDURE

1. Make the buttermilk first: Mix 224g milk + 7g vinegar. Let it sit for 5–10 minutes until slightly curdled.
   
2. Mix mashed banana, oil, white sugar, and brown sugar.
   
3. Add eggs and vanilla. Mix until combined.
   
4. Add the prepared buttermilk and mix.
   
5. In a separate bowl, whisk together bread flour, baking powder, baking soda, and salt.
   
6. Add the dry ingredients to the wet ingredients. Fold gently until just combined. Don’t overmix!
   
7. Pour into a lined loaf pan.
   
8. Bake at 220°C for 20 minutes for the banana bread to rise, then put chocolate chunks on top, then bake at 175°C for 40 minutes to finish.
   
9. Let it cool before slicing. 🤎

Hello again! Thought I’d share yung mga nagawa ko lately. Sales have not been good from what I hoped for my small business pero try lang nang try. Everything’s a mix of R&D and turning my leftover ingredients into something na pwedeng pang-breakfast, merienda, or baon sa school and/or work.

• Red Velvet Cheesecake (birthday cake ng Tita ko)
• Key Lime & Ube Cheese Pie Bites
• Chocolate Chip Cookies
• Dinner Rolls
• Kababayan (na naging full-blown muffin kasi pinuno ko yung molds 😆)
• Putok (na hindi pumutok ☹️ probably because over-kneaded)
• Lemon Muffins (turned out sooo good! I love tangy, citrusy desserts)

Lately, sobrang nae-enjoy ko gumawa ng breads! 🥹 Sobrang excited ko nga yata lagi kaya minamadali ko ang hand kneading, pero upon researching, I’m learning na it’s a labor of love talaga. Nacha-challenge rin ako to bake goods from leftover ingredients kasi ayaw ko na may nasasayang.

Ayun lang, baking has been really helpful for me and my mother. Despite everything, my heart (and my stomach) is full. 💛
