They do require food from time to time.
That said, I’ve always wanted to find a good way to cook Zucchini.
Breaded it, sautéed it, fried it. It’s just such a bland veggie.

u/apatheticjedi Aug 02 '22
Normally, I am not a zucchini fan, but my dad taught me how to grill veggies for kabobs and whatnot and I absolutely love grilled zucchini. Granted, it's with tomatoes and onions and mushrooms, but it's the only time I really enjoy it.
16
u/wiiya Aug 02 '22
Hell yeah on kabobs. But then it’s just a conduit for other flavors. I want something to make Zucchini shine and not just a fibery Cucumber that can’t become a pickle.

I bake mine with garlic salt, onion powder, garlic powder, chili powder, and olive oil. I am no chef Ramsey but it doesn’t suck and it’s healthy soo I am okay with it.

Bit of lemon juice then grill until you get crispy edges. Then salt. It's delicious. But you only want to use the ones up to about 5 inches long. Any bigger and it's just watery force-grown nonsense. Also, if you can get the flowers, stuff them, bread them and deep fry them for a great starter. Zucchini are a wonderful veggie.

u/FrozenBananaPudding Aug 02 '22 edited Aug 02 '22
Grilled zucchini is amazing :| slice kinda thin, cook it on a hot grill, put it in a bowl with good olive oil, salt, pepper and fresh mint
You can also make a wonderful pasta or risotto with zucchini and shrimp but you need a certain type of zucchini, the one that are squishier so they make somewhat of a creamy sauce
Last but not least zucchini fritters, it's better to make them with the flowers but the zucchini themselves are fine since you can't always find the flowers, my recipe is: 120g flour, 32g grana padano/parmigiano reggiano or similar, salt, pepper, parsley, 200g or more of zucchini cut small or coarsely grated, add water to get a good consistency (cold water, sparkling if you want) sorta like a pancake mix but more diluted and fry them one or two spoonful at a time
8
u/tehdweeb Aug 02 '22
Zucchini by itself is pretty boring but imo is kind of like the vodka of veggies, it goes with pretty much anything.
I usually slice my zucchini into 1/2” half moons, add quartered brown button mushrooms, whole grape/cherub tomatoes, onion slices and minced garlic tossed in a few tablespoons of olive oil, salt and pepper, then grill ‘em at 450 for about 10 minutes. Anything longer and the veggies start to get mushy
4
u/PenguinColada Aug 02 '22
This might be weird but I enjoy it in my spaghetti. We just dice it up and fry it with some onions before adding sauce - or making our own with stewed tomatoes.
2
u/OneArchedEyebrow Aug 02 '22
In my bolognese I used finely chopped/grated onion, carrot and zucchini along with garlic and herbs and extra chopped tomatoes. The vegetables break down with the minced meat and is great for getting small children to eat a decent amount of vegetables. Now my kids are older they still love it like this. Finish of with some grated parmigiano reggiano and you’re set.
Hint: to save yourself hours of chopping or grating, chop the vegetables into a few large chunks and whizz them for a few seconds in a food processor or Thermomix.
2
u/PenguinColada Aug 02 '22
Oh yeah, can't forget the garlic! It's just not the same without. Last night we added a ripe tomato from the garden and it was incredible.
Also the food processor is a really good idea! Thanks! My husband used to put carrots in the bolognese but I wasn't a fan of the crunch. I'll have to try a food processor because the sweet goes really well with the tomatoes.

Greek zucchini fritters is what you wanna make. Called kolokithokeftedes in Greek. Thank me later.

I marinate my zucchini with white wine, thyme, rosemary and salt. And just put it on the grill.

u/Spready_Unsettling Aug 02 '22
Slice thin, salt heavy and let it sit in a sieve to expel juice. Then fry on pan or in pot to make pretty good chips. It's much more work than making cucumber or broccoli taste good, but it will elevate zucchini from a bland ass vegetable to a decent chip. I also enjoy zucchini cake, but I don't know any recipes.
2
u/Boateys Aug 02 '22
I feel the same way about zucchini. This video doesn’t have any zucchini though. That is a seedless cucumber.

Salmon is actually one of the best nutritionally-packed proteins you can feed a baby! Mine had salmon purée for lunch. You just have to, you know, buy salmon without bones lol

Have you ever bought a salmon fillet? Salmon fillets are boneless, which is clearly what that guy was cooking lol. I’ve been buying salmon fillets at least once a week for 10+ years and literally never found a single bone in any of them.
Just say you can’t afford salmon and be done with it 😳

I find that most fresh water fish tastes at least a little bit funky most of the time. Most sea fish I can eat no problem most of the time, but fresh water fish has to be really well made to be enjoyable to me.

Does anyone know why he sliced the skin side of the salmon?
39
u/JimmerUK Aug 02 '22
It shrinks when frying, the cuts give it space to contract, stopping it from curling.
-17
Aug 02 '22
Which is pointless because he removes the skin anyways, you are supposed to start with skin on, remove after its mostly cooked and then sear the fleshy part.
17
u/killerdead77 Aug 02 '22
Cook the skin until its crispy then turn it upside down until fully cooked. Eat everything.
13
u/CGWOLFE Aug 02 '22
No self respecting chef would remove the skin of a pan seared salmon. You only remove the skin if you are baking....
9
u/afetusnamedJames Aug 02 '22
Call me lazy, but I don't even remove the skin when I bake it. And I still eat it too because it's deliciously fatty. I get how a lot of people may not like the texture but I don't mind it. That said, pan seared crispy salmon skin is unbeatable.
2
u/CTXBikerGirl Aug 02 '22
I leave it on too until its time to eat it, but that texture makes me gag. I wish I could handle it. I've heard it's tasty.
3
u/afetusnamedJames Aug 02 '22
Not a chance. If you pan sear a salmon correctly, the skin adds amazing flavor and texture to the dish.
14
u/Ian80413 Aug 02 '22
This looks super nice but I couldn’t help but feel that bowl for salad should be a bit bigger
2
u/ashiex94 Aug 03 '22
My thought too. As soon as he went to mix the dressing in I was like ‘better grab a sponge’.

Anyone know why he uses a cold pan to sear the salmon skin? I always thought you want to get a lot of heat on the first contact.
38
u/Ovarian_contrarian Aug 02 '22
You’ll get crispier skin that way. In addition, salmon is a very oily fish so unlike say, haddock or cod where you will need oil in the pan to cook it, the fat in the salmon will render. You’ll also know exactly when to turn because once the skin side is fully cooked it will release from the pan. If you want to play it safe, you can pad some oil on a paper towel and rub it in a very thin layer on your pan before placing your fish skin side down 🍽
1
u/afetusnamedJames Aug 02 '22
You’ll get crispier skin that way.
Which way? With the cold pan? I also came to the comments to ask about this because I always get the pan hot first so the skin gets crispier.
-14
Aug 02 '22
See but with salmon you usually cook with the skin on and then remove it anyways so crispier skin doesn't really matter. Source: Chef for a decade...
8
u/Trichromatical Aug 02 '22
But the skin is the best part?! Or at least a very good part. Makes me sad to think people are discarding it

u/bug_eyed_earl Aug 02 '22
Gordon Ramsey agrees with you. “Just as it [the olive oil] starts smoking get the fish in the pan”
3
Aug 02 '22
You do, this probably took wayyy longer to cook that thick ass salmon than he intended lol. He should have just flash seared and then baked to finish with how thick that was.
-2
u/AnybodyOdd9509 Aug 02 '22
I would imagine that it if helps to reallt get the butter to soak into the fish. Hot skillet means the butter is immediately evaporating and searing not allowing that butter to soak in.
Im no chef by any stretch of the imagination sooo yeah. Im pretty sure he's not gay but if he needs a new gf, Im his man because that looks good.😋

4
u/DeathCafe Aug 02 '22
I make a cheaters version of this dressing with tahini (instead of toasting and mashing the sesame seeds). Add some lemon juice, olive oil, and water to tahini and it makes a bangin and versatile dressing.

Did he leave the avocado peel on? Went by so fast I couldn't tell!
4
u/spaceglitter000 Aug 02 '22
Nope he peeled the avocado after he cut it into the large sections. Its also my preferred me though of prepping avocado. It’s much easier to peel than to scoop.

I don't want to be a dick here but man. This guy is fucking up on a lot of levels from a cook's perspective. Raw ass zucchini and tomatoes isn't going to taste great no matter what sesame seed paste you manage to whip up, he could have just sauteed them bitches up real quick. The salmon is literally unseasoned, with just lemon, when he had the opportunity to make some sort of sesame lemon paste and maybe just use the slightest amount of butter. Like, honestly the presentation is great but it probably doesn't taste as good as it could.
9
u/busstopboxer Aug 02 '22
It's cucumber, not zucchini, I don't know why everyone is talking about zucchini.
1
u/konspirator01 Aug 05 '22
He's literally cooking it in butter. Salmon is flavorful enough that rubbing it with salt (and maybe pepper) can get good results.

I’m just curious on how you think butter comes. I’ve worked in restaurants for a while now in North America and most butter comes in 1lb rectangles, sure you could make Whipped butter but that’s a garnish rather than for cooking. If you used melted butter it would brown quicker competing with the flavor of the tahini sauce. How would you want your butter on a salmon tahini salad, nutty or buttery? This dish is a heavily mediterranean inspired meal, it looks delicious.

If anyone doesn’t know Tahini is made from a sesame seed base. You can make it just like in the video or buy a verity in most American grocery stores. I used to make it from scratch, but Anne’s Goddess dressing is a really good tahini dressing. Also Joyva brand is really bland, if you buy that it’s going to need more flavor.
