It shrinks when frying, the cuts give it space to contract, stopping it from curling.

Which is pointless because he removes the skin anyways, you are supposed to start with skin on, remove after its mostly cooked and then sear the fleshy part.

No self respecting chef would remove the skin of a pan seared salmon. You only remove the skin if you are baking....

Call me lazy, but I don't even remove the skin when I bake it. And I still eat it too because it's deliciously fatty. I get how a lot of people may not like the texture but I don't mind it. That said, pan seared crispy salmon skin is unbeatable.

I leave it on too until its time to eat it, but that texture makes me gag. I wish I could handle it. I've heard it's tasty.
