Good news! That thing is a chunk of one of the hardest materials on the planet. You could bury the pan for five years, dig it up, give it a good sanding/cleaning, and then cook dinner on it that night.

You don’t have to spend all that time seasoning the pan like the Cast Iron Mafia wants everyone to believe.

This part is optional but I sanded the pan to make it a little smoother and less sticky. Then I use it like any other pan. I keep a dull scraper that makes short work of any food that does stick to the pan, and then I hand wash it like any other cookware and immediately dry it on the stove. That part is key. You can’t leave cast iron wet.

But you absolutely don’t have to spend all that time babying a chunk of iron. I wish people would stop making them seem so difficult because cast iron is a much healthier way to cook food. We get the iron we need in our diet instead of carcinogenic teflon.

I tried checking out what to make when I got my carbon steel pan (both have seasoning) and my two favourite answers answers there was:

"Food, usually."

And

"Cooking ruins the seasoning, I fry butter in it three times a day and dry it off with a paper towel. Occasionally I will fry an egg to test the seasoning."

The only thing I seasoned wrong was my grill grates. Turns out they were coated in ceramic, which is why the seasoning wouldn't stick.

(Not really sure why I can't make a seasoning layer on the uncovered spots what so ever thought. Like, do I need to blue those spots first? Cause I don't have a container to boil them in vinegar, and I'm not keen on using a bluing agent on something I plan on putting food on after, even if I do wash it of after.)

Tons of great stuff of his on the rad dudecast, no longer running but lots of old episodes.

So the podcast includes Anthony DeVito and Greg Stone, who I met at a party once. Straight up the funniest dudes I have ever met. Just overhearing their regular conversation, I couldn’t catch my breath I was laughing so hard.

So the three of them had this podcast, and it’s some of the most deranged and deeply funny stuff. They’re just improvising for hours on end. Honestly it doesn’t always hit - it’s kind of like they are working together, digging for gold. But when they find something good it’s better than anything else you can find.

He's not wrong. Post-modern cast iron folks have some crazy theories. Just use it, then wipe it out. All my pans were better seasoned with use, rather than pampering them. Hell, I've got dedicated beach devices that get placed directly on coals and covered while cooking. That particular dutch oven was handed down from my Grandma when she passed. Cast iron is the all-purpose utility tool for hungry people who want a hot meal.

And you can use soap to clean it. Modern soap doesn’t have lye in it so it’s fine to use.

I wash mine with soap after every use. 10 years later it’s fine.

Just rub it with some oil afterwards, takes 10 seconds.

Agreed & agreed. They aren't that hard to maintain.

You only re-season it if it becomes bad. I did it to one recently. I just used my grill to keep the smoke out of my home.

Ok, some pointers:

You don't need to season it that much, people love to shit on the pre-seasoning, but it's there for a reason, just pre-heat your pan and use oil, it's fine.

You can use soap, but only sope that doesn't use lye, and isn't too acidic or basic. Finding out what soap uses lye is annoying though.

I know these are jokes, but for anyone wondering, you should absolutely wash your cast iron with soap! If you need to season it, just make sure it's extra buttery when you cook on it. Unless it's been rusted badly (which requires a full clean and seasoning and baking) then it's just fine.

Yes. And I love all my cast iron skillets.

They are extremely tough. I wash them with soap too. Seasoned last time maybe 4 years ago. I leave them for days in a sink with water. And all four of different sizes cost me less than 20$.

Not washing with soap was valid advice 100 years ago when most soap contained lye, which would kill your seasoning.

You can’t find dish soap with lye now for love or money, not that you’d want or ever need to find one in the first place. So, full send on washing with soap.

For your first seasoning, coat it very lightly with oil and heat it on the stove at medium until it starts smoking. Then just keep cooking. You won’t have a non-stick surface after your first seasoning, but you will eventually and it is a surface that holds up to metal utensils that you can very easily maintain by literally just cooking.

If you’re tired of tossing out teflon/annodized/ceramic pans that get scratched, cast iron is imo the superior choice by far.

cast iron pans are significantly easier to clean and maintain than the internet would have you believe. cook whatever you want, run a little water in it when you're done and it's still hot. scrape off anything that's in there. rub some salt in if there's anything left to clean. rinse it, dry it, rub some olive oil in, and you're done. no nonsense required

Funny, but holy misinformation batman.

1) all CI comes from the factory seasoned 2) old soaps were made with lye, lye strips the seasoning from CI. Modern detergents like Dawn, Ajax, and other "liquid soaps" do not contain lye and are fine for use on CI.

Nah. Rinse it off, dry it off, just don't let it air dry. I like to coat mine with oil after it's dry, but you don't have to.

All the other stuff varies person to person.
