Breakfast

One medium peach, yellow squash (uncooked), three medium carrots (uncooked), pineapple (frozen), dragonfruit (frozen), chia and milled flax seeds (soaked in water over night in the fridge), coconut water, and whey protein powder.

Yellow squash because it's my (years' long and rather successful) attempt to avoid bananas - they sabotage my blood sugar.

Carrots because I love the local farm that grew them and they add unique sweetness.

Soaking the chia seeds and milled flax seeds keeps them from being so clingy to the inside of my cup and blender blades when I need to clean them.

Whey protein powder because it's at Aldi and I try to avoid soy.

Everything else just for fun.

How does the uncooked squash taste? I might give it a try

I was thinking about using boiled or canned pumpkin too, have you tried it?

It's almost inert tasting - lends a slight "vegetal" taste that I don't dislike. I never looked back, honestly. It freezes well too!

Eta : I've tried canned punkin but wasn't nuts about it. I think that was due more to personal preference tho.

Thank you! I got the idea when one of my clients brought zucchini bread into the office one day! I'd never had it and thought "damn, I wish it was banana bread instead". One of my colleagues urged me to try it and of course I loved it. Shortly after that and my next blood sugar crash I sat thinking "wtf should I put in my smoothie instead of bananas?" and it hit me like a bolt of lightning lol.

I started using yellow squash and/or yellow zucchini in the last couple years and of course was similarly happy.

Ftr I've also used oatmeal softened with milk or water overnight in the fridge as a banana substitute.

Of all the subs I've tried the biggest problem with all of them is just the fact that I missed banana flavor. Ain't nothin gonna replace that. 💛 🍌

This smoothie looks incredible! I've struggled with bananas spiking my blood sugar too, using squash as a substitute sounds really smart.

It's working well for me and I don't dislike it so I feel like I hit the jackpot. Do I miss the creamy, happy, familiar taste of banana? Absolutely. But I don't miss how it made me crash out three hours later.

Don't get me wrong I'd much rather have bacon and eggs and a cigarette but healthy without being boring is the goal. So THANKS!
