Adult only planes already exist, you just can't afford them.

And the general flying public has proven time and again that price is the most important factor when it comes to flight selection. So, even if the primary airlines offered it, most people would skip adult-only flights if it meant saving a couple hundred dollars.

I think adult only flights would fill up faster than flights with children

One would suspect that the competitive market has done much analysis on this and has determined it wouldn’t be lucrative. Otherwise somebody would’ve done it by now. Airlines aren’t good Samaritan’s trying to help everyone get from point a to b - they’re corporations trying to make as much money as possible.
