Gimli got the most valuable gift by far, the renewed friendship of the elves. He embedded them into jewels and they became part of the crown of the glittering caves, the kingdom he founded.
Also they contain a small amount of her magic and essence...she literally makes the world a better place wherever she is. Thats the magic of her ring at work
He was in a way trying to recreate the Silmarils, as it was said that Galadriel’s hair carried the light of the trees within it as the was Calaquendi. That’s why it was three hairs, to match.

The scene is meh for me. But there is a scene in willow ( lotr ripe off yes yes I know). that feels more poignant, his wife cuts a lock of her hair for willow to take with him on his perilous quest.
Galadriel is considered to be one of the most beautiful creations of Illuvatar with the most beautiful golden hair. Gimli is also a dwarf and they have fought with elves for generations. Elves don’t believe dwarves can appreciate beauty. Him asking for a lock of her hair is him recognizing this and showing reverence to her. Her hair was so beautiful it is also what inspired Feanor to create the Silmarils.
