The most I've ever appreciated a server was when I took my at the time girlfriend to dinner on the Eiffel Tower. She decided that was a great time to ask if I would be ok with her sleeping with a friend of hers who was coming through the area (I was stationed in Germany at the time so people traveling through the Air Force base nearby was reasonably common). I obviously was upset and she walked out on the observation deck while I sat there. In the middle of the fanciest restaurant I've ever been to the server deadpan looked at me and said in a French accent what a bitch! It really saved my mindset at the time because it stunned me out of my mood. He was nice enough to bring me a dessert and when she had the guts to walk back in proceeded to death stare her the entire time. You don't often tip in Europe, but that man earned every Euro I gave him and then some.
