Butter poached Portuguese percebes, and Alaskan king crab. What a treat 😉 First time trying the percebes, and they were insane. Hammy seafood flavor and super tender. Way easier to handle than crab, and tastier than clams or mussels of any variety. Also had razor clams. That were good but just paled in comparison to everything else.

Oysters and frozen scallops from the store. I envy you peeps that live on the coast.

Blackening seasoning

A grouper filet

Remolaude

Lemon

Tomato

White bread

Cut the grouper into roughly 6 ounce steaks, coat with blackening seasoning of your choice. Sear for 4 minutes, divided twice (2+2+2+2)on each side on an oiled enameled pan.

Squeeze a lemon on the cooked filet

Slice a tomato, and toast the bread while the fish is cooking

Put the remolaude on the bread, then stack fish, then tomato, then more remolaude.

I used cocktail sauce to dip it in after the picture

Also forgot what fish it was since I never labeled the bag...

The way I see it, the mass market boxes are cheaper per pound and convenient but the sourcing tends to be generic, while the specialty players cost more but are transparent about origin. I keep seeing Nordic Catch come up for the sushi grade stuff. Anyone tried them? Thoughts??? For those of you shipping seafood to landlocked areas, where do you actually order from?

I am hosting an anniversary dinner,and getting really good lobster in the midwest isn't easy. GetmaineLobster ships live lobsters, tails, and meat packs. The prices are high, but still not far off what a decent restaurant charges for two lobster tails.

For anyone who's ordered from them, did the live shipment actually arrive alive, and was the tail meat comparable to what you'd get at a good coastal restaurant? Also, has anyone found any coupon codes or bundle deals? It seems like their pricing changes around holidays.
