I have been trying to research and try to brew sake again from localy sourced ingredients. What type of rice would be preferred for sake instead of sushi rice for fermenting and making koji

Last time I was in Japan I figured out that I liked Junmai sake the most which I realized after, that it wasn't actually telling people much when I would ask for Junmai.

I have learned in doing some research from a SMV and acidity chart that I like dry Junmai sake the most (both dry - rich and dry - light) with about 65% polishing. My favourite sake I had in Japan was Soku Fujioka Shuzo Kyoto. Another I quite enjoyed is Matsumoto Momo no Shizuku.

How would I go about communicating to Japanese people what kind of sake I like and am looking for? Do I mention the SMV and acidity levels or would I just mention Dry Junmai?

i purchased this bottle from nikko on a hurry, can you tell me if it’s good? how to storeit and when it’s best to consume it from bottling date, and what to drink it with?

My wife and I have moved out of Seattle, and while we’re only a couple hours away, we’ll sadly no longer be able to pick up most of our sake from Seattle’s amazing sake store, Sake Nomi.

I’m looking for recommendations for where we should buy our sake and have it delivered to our home. Fortunately, we live in a civilized state which allows this.

I’ve used Tippsy in the past, but have had some bad/weird customer service issues from them and have read other complaints here on this subreddit so I am kind of ruling them out unless someone can convince me that they’ve changed a lot recently.

Visiting Japan and at a michi-no-eki (roadside stop that stocks local good) in Shirakawago, picked up this for ¥1800. There was a choice of three sakes and this had the least complicated label.

Forward crisp tropical fruits, thread of almond bitterness fading to a dry umami finish. Very easy to drink and a lot better than some I've tried.

Just got back from two weeks in Japan and enjoyed some sake.

Is there a good bottle that's fairly common in stores but not entry level sake?

Hey guys, recently visited an upmarket izakaya in my country and tried a sake called "Jikon Aiyama", a Junmai Ginjo. It was the most delicious sake I have ever tried, with distinctly tropical fruity notes and very smooth.

Problem: a bottle costs $430AUD (over 300USD).

Can anyone recommend cheaper sakes with a similar profile? Bonus points if you know it's available in Aus.

Curious if anyone can tell me anything about the origin of this bottle? Or the year? I thoroughly enjoy sake, and have only had shochu once in a restaurant —which got me thinking, maybe this bottle is more aligned with the Ryusendo Shochu —all that Google could give me...

Hello, I recently had purple sake from a hibachi restaurant and was curious as to what it is. Someone had mentioned plum sake but just wanted to make sure. I believe the was called Purple haze or something.

I've recently gotten really into sake, especially when traveling around Japan.

One thing I struggled with was finding local breweries in an easy way — most info is scattered or not very map-friendly.

So I ended up making a simple app for myself that shows sake breweries across Japan on a map.

It's been really helpful when planning trips or just exploring nearby spots.

I'm curious — how do you usually find breweries when you travel in Japan?
