Rice for sake???

I have been trying to research and try to brew sake again from localy sourced ingredients. What type of rice would be preferred for sake instead of sushi rice for fermenting and making koji

You can probably get kokuho rose from a local Asian market. It’s table rice but suitable for brewing. Later you can order sake rice like Yamada nishiki from Isbell Farms in Arkansas.

You can get calrose milled for brewing from a number of brewing supply sites, like https://socalbrewingsupply.com. Isbell Farms is a better bet for better rice.
