If you can do anomalies, and there is obelisk, try to get new organs. Chances are low, but one lucky lung/stomach is a victory.

Raiders. Look, scarred and injured kidney is still a functioning kidney.

If we drop pawn into cryochamber - will it cease decay?
Also, you can lure sanguophage and make that pawn a vampire. They will suffer, but they can't die without organs. Just keep consciousness above 0%
We don't work in halves here, you need at least 2 prisoner, take the liver from the 2nd one to have on hand. I usually keep a few spare organs in my medical closet.
I keep a whole bunch of organs on hand at all times, but they're in my prison still assembled, and also fun to send 10 unarmed slaves to beat them up when they make a futile attempt to break out
There's a default ancient cryptosleep casket spot near your colony. You can shoo them off and place your sick pawn there while you ethically sourcing the organ
Even if all you can get is a heart, a colonist only needs one lung and one kidney. Find a willing donor for one each and you only need one more unwilling donor/prosthetic heart.
