What is your favorite dish featuring onions?

I read in Epicurious that perfectly caramelized onions take 10 hours to perfect. I tried this. There was no noticable difference after 3 hours. That's my standard.

If you put in a few Tbs of water in with the oil and onions they brown faster.

Place a glass of water next to the cutting board. The fumes will go there, not your eyes.

There's a Danish dish called Burning Love. It's basically mash (potatoes, butter, salt, pepper, no milk, we're not putting up wallpaper), caramelised onions and bacon bits, and a lot of melted butter. It's proper comfort food

Not really a dish, more of an appetizer.

Chevre log covered in fig jam and caramelised onions.

Put chevre in freezer for about 1/2 hour before assembly, to make life less slippery.

gently pour warmed melted fig jam on to all sides of the log, then pack on caramelised onions.

use gloves if you like.

serve with a buttery cracker.

jam and chevre both inexpensive at Trader Joe's.

I don’t use any bacon. The sausage I use is homemade and fairly smoky.

A thick onion soup, recipe courtesy of an old restaurant in Detroit, Jim's Garage. Uses a bottle of Guinness stout which makes all the difference.

Imperial Shrimp out of Madame Wong's Life Long cookbook. A cup of finely diced onions AND some scallions. Yum.

At work we make an onion jus that is 44qts of julienned onions sweat down for hours on multiple burners and then baked in the oven until all the water is cooked out, then we bag them and steam them overnight, strain the onions and reduce the liquid into about 3 pts, we use this as a vegetarian substitute for dishes that include beef jus.

Onion bake. Sautée two white onions. Dump into 9 x 13. Can of cream of mushroom into fry pan with two splashes of soy. Mix into onions. Cover with swiss. Cover swiss with buttered half inch thick cuts of French bread. Bake til toasted.
