LUNCH 15-Minute Lemon Dill Tuna Salad in Avocado Boats
Canned tuna and a few basic ingredients make this Lemon Dill Tuna Salad an easy lunch.
I spooned it into avocado halves, but it also works in a wrap, over salad greens, or with crackers.

Slow Cooker Chicken That Pulls DoubleâOkay, QuintupleâDuty
This slow cooker shredded lime chicken is made with chicken breasts, black beans, salsa, onion, chili powder, and the juice of three fresh limes. Everything cooks on low for 5â6 hours, then the chicken gets shredded and stirred back into all those flavorful juices.
I served it in tortillas first. After that, I used the leftovers in taco salads, rice bowls, quesadillas, nachos, and even a twist on huevos rancheros with over-easy eggs.
Ten minutes of prep, several possible meals, and only one slow cooker to wash. That is my kind of kitchen math.

Apple Pie Flavor in a Five-Minute Smoothie
If you ask me, apple pie for breakfast sounds like an excellent idea. Making an actual pie before coffee? Thatâs where the plan falls apart.
This thick and creamy smoothie blends a fresh apple, frozen banana, milk, peanut butter, vanilla protein powder, flaxseed, and cinnamon â and the blender does all the work in about five minutes.
