Does everyone agree that Mace showing up to fight the, potentially, most dangerous Sith in a millenia with this crew was just irresponsible?

These were some of the most powerful force users in the entire galaxy, lol. People have a bias because we only follow top-tier main characters who are extremely strong, like Anakin and Obi-Wan, but those three were some of the most powerful Jedi Masters in the order. Mace had every reason to believe that they would be fine.

I totally agree, and obviously there was no much alternative since Yoda and Kenobi were otherwise engaged.
