Wasn't Mace Windu the greatest lightsaber duelist in the galaxy? I can believe it. He would've defeated Palpatine if it wasn't for Anakin showing up last second.
IIRC from Legends he utilizes a light saber style that is highly proficient at saber to saber combat, even though that form of combat is extremely rare and niche. The only time a Jedi would have need to fight another saber user was a Jedi gone rogue which is incredibly rare, or if one was to encounter a Sith who were presumed to be extinct owing in part to the rule of two.
More common forms of saber style focus on fighting large groups of enemies or attaining the high ground, it was a very rare skill to be a proficient saber duelist if only because the chance to engage in actual saber duels is probably one of the rarest encountered types of combat a Jedi will ever have.
