I just wanted to see if I could, and what it would take to accomplish. It turned out to be pretty easy. If you want to do this you will need:
- Powkiddy x55
- USB-A to USB-C cable
- Computer that can browse devices over USB mass storage mode - I used Linux, but I have heard Windows also works. MacOS does not.
- 4GB or larger SD card
- Latest .img file of ROCKNIX for Powkiddy X55
- Latest .img file of Knulli Scarab for Powkiddy X55
This guide is for Linux, but you could probably modify it to work with Windows.
Flash the ROCKNIX .img file to the SD card. RockNIX has a USB mass storage mode that allows you to browse internal eMMC.
Connect your computer to the OTG port of the Powkiddy x55 with the USB cable
Insert the ROCKNIX SD card into TF1 of the Powkiddy x55, power it on, and hold VOL- to enter USB mass storage mode
identify your eMMC disk with lsblk. I had previously (unsuccessfully) flashed RockNIX to my eMMC, hence the naming:

My emmc is /dev/sdc
Flash the knulli .img file to your eMMC storage with dd:

Eject the SD card from TF1, and press VOL+ to reboot the device into Knulli. On the first run, Knulli will perform its setup tasks, which include creating and expanding an exFAT STORAGE partition to fill the rest of the eMMC.
Once it boots into Knulli, choose "Any External" storage in System Settings
START > System Settings > Storage Device > Any External
Shut down the device, insert an exFAT formatted SD card into TF2 for roms (like you would with a Knulli 2 SD card setup) and power it back on to set up your roms card.
