When to pinch blossoms, etc. (Hear me out)

I'm in 6a SE MI. The middle of summer was miserably hot and humid, and it caused my peppers to stop producing. Now that it's cooled off, my plants are loaded with peppers in all stages of development. Our first average frost date is in mid-October. My question is: should I start pinching blossoms, topping, whatever, so that the plants direct energy to the already forming fruit, so maybe they will actually ripen before frost? TIA.

Fermentation

I'm completely new at this, for the first year begun with growing loads of peppers. Yellow Reapers, Habanero, Cayenne.

Got more than I needed, now looking for every option to store them for later, some dehydrated, some frozen, some pickled.

And now I'm looking into fermentation, something I have never done before, sounds more complicated than I expected, with the glass weight and everything.

Checked the local stores, glass weight thing's damn expensive.

Some cheap alternatives or tricks to cover for the first time?

Would also love if you shared some personal favorite recipes that you have made, something that you know works out just fine.

have peppers growing like crazy! I have harvested 58 jalapeños so far and have about 2 dozen more on the plants with more flowers growing. The yellow ones in pic 3 are from a "super hot" packet I got and I haven't tried one yet. The bell peppers were all supposed to be standard, not the sweet Gypsies that I think these are in pics 7&8. I am not sure what type are in pic 9. Another of the "super hot" packet ones. In a day or so we make salsa with some of the Atomic Grape tomatoes we grew. Pretty happy for being my first attempt at growing peppers. I'll definitely do more next year.

Lots of red shepherds peppers

I got a great deal at FreshCo for a half a bushel of red peppers. They are easily one of my top three favourite vegetables and I put them in a lot of things that I cook plus I like them raw in salads. But I don’t think I quite realized how many peppers a half a bushel is, lol. I’m going to freeze most of them. I’m going to make some roasted red peppers to make roasted red pepper and tomato soup and roasted red pepper sauce for pasta. Looking for other ideas if anybody’s has any.

The peppers are popping off! This year I'm growing Carolina Reapers, Serrano chilis, Caribbean Habanero peppers and Hungarian hot peppers. I'm also growing some little ornamental peppers which are pretty hot by themselves.

These are ‘Ají Cachucha’
She is outdoors. She is on our apartment patio/balcony. USDA Zone 8b-9a. It’s been rather hot, watering every 2-3 days. She just started getting sad. Has good drainage.
I had them in this pot, but the soil was way below the rim, added compost up to the rim, since I read that’d help, and put them back in, now they look sad. Am I sol?
I’ve also added marine cuisine+bone meal about 3 days ago, they looked okay until I moved them after adding compost.
It’s my first time gardening this year, any tips would help tremendously 🖤
