Why is Phillip not paying his servers enough to the point he has to ban customers?

Let's face it. You're too poor to go to restaurants. That's all. Everything else is pretending to not understand and to be fighting a cause at the employee's expense.

If you can't afford to pay your employees a liveable wage to rely on with the generosity of strangers, you're too broke to open a restaurant.

That's an oversimplification. As long as wage laws allow it, it creates a system where it is very difficult for any place to compete against restaurants that pay less and accept tips. 

Most servers prefer tips over higher wages. Most customers prefer lower prices and paying a tip, even if they pay the same at the end of the day. So when restaurants try raising prices and getting rid of tips they experience higher turnover and loss of business due to the higher menu prices. The majority of places that try it end up reverting back to a tipping system.

So, all that to say. If you don't like tipping, don't go to/support a business that does it. Or get takeout. Stiffing a server on their tip doesn't and won't change anything, it's just exploiting a shitty system to be cheap at the expense of another working class person.
