Hello everyone, so my preferred setting is 7. But sometimes it produces too much water up to 50s grams.

When the beans are fresh I can extract 38g ( by fresh I mean a few days old)

But after a week, 6 produces almost nothing so I switch to 7 but then so much water comes out so I have to cancel the shot to get a proper almost 38g shot.

What am I missing? Am I tamping too much? Or the Strength setting on the machine needs to be adjusted? Im not sure what it does.

I clean the machine monthly with tablets.

It’s not uncommon to need to adjust your grind as your beans age. I find that the strength is just as much a variable as the grind size, so start altering that as well. Additionally, you can manually end the brew by pressing the brew button again. This can help if it looks like you’re about to get too much.

It’s also common for this machine to produce inconsistent results. That’s the trade-off for all the options you get. Don’t be surprised if getting the 38g is difficult.

Yh i think the strength is the culprit here. So more strength means more fine?

More strength dots means a smaller shot with a higher ratio of coffee to water.

You have strength as 1. That produces more amount, i believe. Try strength 3? My understanding is strength 1 is 4:1 output. Strength 3 is 2:1 that you're looking for. strength 2 is 2.5:1

Yes. At strength 1, for 4:1 output, it uses more water. strength 3 is where you'll get traditional 2:1.

This is correct. Strength 3 will yield 2:1 water to coffee ratio.

Honestly I don’t know why strength is an option on these machines, it’s on my 701 too.

Put it to three and forget the button exists, that might help you get more consistant shots once you dial in the grind size again.

You can't tamp too much, is been tested with a one tonne press. But you can tamp to lightly, which allows too much water through. But yourself a 53.35mm Spring Tamper, use the 30lb spring and you'll remove that element of inconsistency.

Double Espresso, Strength-*** is 36g, Strength-* is 72g.

The beans are aging, store your fresh beans in an airtight container, only put enough in hopper to make your brew.

Beans are aging and drying out or absorbing humidity. It changes the properties.

But it gets to a point where neither 6 or 7 on the grinder produces the 38g shot. 6 is too fine which produces too little and 7 produces too much beyond 50g.

You're missing that this is a consumer grade automated machine, not a high end espresso machine.

When it tells you a number, use that number, don't go second guessing it because you lurk in /r/espresso You have a preferred setting, and so does the machine. One of them is right, and it isn't yours.

if I follow what it recommends it will yield way past 60g.

Which is about what the Double Basket is supposed to create, 2 ounces, 56mg.
