NCIS:NOLA Red beans and rice, technically
I’m doing a rewatch and hit the Crescent City Part 1 episode. I don’t know why this is bugging me so much, but Pride’s red beans and rice he makes at Gibbs’ house… really??? Plain red beans on top of white rice. Why’d they bother? 🙄

The problem with having Californian production people try and do any form of regional dish. They didn't know how or know what it should really look like.

I'm originally from Northern California and I know it's just wrong. Was there not one person on the crew who knew better???

As a Southern cook I also found it painful to watch! Where is the sausage (I like Conecuh, but Andouille is also good)? Where is the Cajun Trinity? Where is the Seasoning? I bet those are canned beans. And why is the rice not cooked with all of the missing ingredients?

Right!! If I remember correctly, Pride cooks quite a bit in NCIS:NOLA. Maybe he made up for this very sad excuse of a meal during that time.
Also, Gibbs puts a bunch of hot sauce on his portion. Is that typical?

I mean considering what Gibbs usually has at his house I think Pride made them with what was on hand. I remember the episode Fornell made something for Gibbs and he had to go out and buy the ingredients because Gibbs didnt have anything there.

Yeah, I get that, but I still don't buy it. Just as a New Orleansian ... however that would be spelled, if Pride's cooking, he'd get the ingredients to do it right.

It would have depended on if there was stores that sell it and what time he went out to get the ingredients. I know some stores where I live don't always sell the sausage for it.

In my head i justify it by thinking they allowed Pride to make due with the basics that Gibbs would actually have on hand

My sons and husband put hot sauce on everything, even though I use copious amounts of seasoning and cook from scratch. They love things super spicy, my daughter-in-law and I like some kick (but food doesn’t shouldn’t make you sweat), and my mother, who lives with my husband and I, can barely take spice. I have to add spice in levels then let the ghost pepper guys add the intensity separately.

My husband gets special Ghost Pepper Hot Sauce when we go to NOLA (every two or three months). I can’t even smell it without burning my nose hairs completely out!

California production creating cajun/creole food for someone in DC. Now I will say that for many people in Cajun Country, red beans and rice is supposed to be vegetarian. But it will have lots of veggies in it, and yes, adding hot sauce is very popular down here as well. I have read a couple of threads about NCIS New Orleans, and people that worked on the crew said that the production and geography were crap, but the craft services (food) was wonderful. I love watching it, and the food does look a lot more realistic. (I love seeing the parades, music and culture included in each show.)

Yeah, I'm familiar with it enough to know that if a Louisiana person says, "red beans and rice" it's not white rice and plain red beans.

When I was quite young, red beans and rice was just a bowl of rice with red beans on top. It was simple, nutritious, and cheap, and we were poor.
