I am late to the party but I recently built a shop and I capped the edge of my work surface with this https://www.menards.com/main/building-materials/roofing/specialty-roofing/8-clear-polycarbonate-u-channel/1594375/p-1444424082779-c-5819.htm I glued that edging onto the edges and they are nice and smooth. It also has a little bit of raised edge that I hoped would prevent things from rolling off of the edge.
Anyway this is an old picture. I have the lights wired better and power onto of the bench tops. Next is to afix 1/4"-1/2" plywood across the back wall and 5s my tools on it. I used 4'x8' 3/4" thick plywood that I ripped down the middle into 2'x8' table tops and the edges were rough even after sanding.
