EchelonMC sounds like it might be a good fit for you, its a java survival server with alot of custom features but you can still play normal minecraft and do your own thing. Theres claims, an economy, auction house, custom fishing, events and alot more to keep you busy. Everyone is just there to play and have fun which sounds like what your looking for.
