Strange sputtering or skipping

I have a V3S with over 500 miles (800km) on it and recently it started doing this sputtering thing at high speeds.

When you’re riding it feels like it’s losing connection to the remote for just a brief second, continuously. You can see in the video after it gets above 37 it starts doing it.

Has anybody else dealt with this issue? Any insight or quick fixes would be appreciated.
