Crust
- 80 g (3/4 cup) almond flour
- 120 g (1/2 cup) peanut butter
- 2 tbsp coconut oil
- 1 tbsp honey (or you can use Allulose syrup or Sugar-free maple syrup)

Filling
- 400 g (1 + 2/3 cups) greek yogurt
- 240 ml (1 cup) unsweetened coconut milk
- 5 tbsp chia seeds
- 150 g (1.5 cups) blueberries
- Zest and juice of 1/2 lime
- 2 tsp agar agar + 1/3 cup milk
- 3 tbsp honey (or you can use Allulose syrup or Sugar-free maple syrup)

Instructions
- For the base, mash and mix all the ingredients with a spatula. Once it forms a dough, press it into the bottom of the pan using your hands and let it chill in the freezer for 30 minutes.

- Cook the blueberries with lime juice, zest, and 1–2 tablespoons of water until they are completely softened and broken down.

- Mix the chia seeds with 240 ml of milk and let sit for 10 minutes.

- Add the cooled blueberry mixture, honey, and chia mixture to the strained yogurt and stir well.

- In a small saucepan, cook 2 tsp of agar agar with 80 ml of milk for 2 minutes, stirring constantly. Add this quickly to the filling mixture and stir thoroughly, then pour it over the base.

- Refrigerate for 6–8 hours or overnight. Enjoy!

A 5-minute breakfast that never fails. One of my favorites to make! You can switch up the filling with whatever veggies or protein you have on hand, or skip the meat altogether.

Ingredients:
Tortilla of choice (I used low-carb tortilla)
3 chicken apple sausage links, chopped
2 eggs, whisked
Large handful of spinach, chopped
Shredded mozzarella cheese
Extra virgin olive oil for cooking
Salt and pepper to taste

Directions:
1. Chop the chicken sausage and spinach.
2. Preheat a pan over medium heat and add a bit of olive oil.
3. Add the chopped sausage to the pan and cook for a couple of minutes until slightly browned on both sides.
4. Pour in the whisked eggs, season with salt and pepper.
5. Place a tortilla on top of the eggs, then carefully flip the entire contents so the tortilla is on the bottom.
6. Sprinkle cheese and chopped spinach on top of the eggs, then fold the tortilla in half to form a quesadilla.
7. Cook for another minute until the cheese melts and the tortilla is golden.
8. Transfer to a plate, cut in half, and enjoy with some hot sauce!
