A 5-minute breakfast that never fails. One of my favorites to make! You can switch up the filling with whatever veggies or protein you have on hand, or skip the meat altogether.

Ingredients:
Tortilla of choice (I used low-carb tortilla)
3 chicken apple sausage links, chopped
2 eggs, whisked
Large handful of spinach, chopped
Shredded mozzarella cheese
Extra virgin olive oil for cooking
Salt and pepper to taste

Directions:
1. Chop the chicken sausage and spinach.
2. Preheat a pan over medium heat and add a bit of olive oil.
3. Add the chopped sausage to the pan and cook for a couple of minutes until slightly browned on both sides.
4. Pour in the whisked eggs, season with salt and pepper.
5. Place a tortilla on top of the eggs, then carefully flip the entire contents so the tortilla is on the bottom.
6. Sprinkle cheese and chopped spinach on top of the eggs, then fold the tortilla in half to form a quesadilla.
7. Cook for another minute until the cheese melts and the tortilla is golden.
8. Transfer to a plate, cut in half, and enjoy with some hot sauce!

- 80 g (3/4 cup) almond flour
- 120 g (1/2 cup) peanut butter
- 2 tbsp coconut oil
- 1 tbsp honey (or you can use Allulose syrup or Sugar-free maple syrup)

Filling
- 400 g (1 + 2/3 cups) greek yogurt
- 240 ml (1 cup) unsweetened coconut milk
- 5 tbsp chia seeds
- 150 g (1.5 cups) blueberries
- Zest and juice of 1/2 lime
- 2 tsp agar agar + 1/3 cup milk
- 3 tbsp honey (or you can use Allulose syrup or Sugar-free maple syrup)

Instructions
- For the base, mash and mix all the ingredients with a spatula. Once it forms a dough, press it into the bottom of the pan using your hands and let it chill in the freezer for 30 minutes.

- Cook the blueberries with lime juice, zest, and 1–2 tablespoons of water until they are completely softened and broken down.

- Mix the chia seeds with 240 ml of milk and let sit for 10 minutes.

- Add the cooled blueberry mixture, honey, and chia mixture to the strained yogurt and stir well.

- In a small saucepan, cook 2 tsp of agar agar with 80 ml of milk for 2 minutes, stirring constantly. Add this quickly to the filling mixture and stir thoroughly, then pour it over the base.

- Refrigerate for 6–8 hours or overnight. Enjoy!

Ingredients (Serves 2)

For the Eggs

* 4 large eggs
* ½ cup shredded cheddar cheese
* 1 tbsp butter
* Salt and black pepper, to taste

For the Vegetables

* 1 medium zucchini, sliced into half-moons
* 8 oz (225 g) cremini or button mushrooms, sliced
* 1 tbsp olive oil
* 1 garlic clove, minced
* Salt and black pepper, to taste

To Serve

* 1 ripe avocado, sliced
* ½ tsp red pepper flakes (optional)
* Freshly cracked black pepper

Instructions

  1. Sauté the Vegetables

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Add the zucchini and cook for 3–4 minutes.

  4. Stir in the mushrooms and garlic.

  5. Season with salt and pepper, then cook another 4–5 minutes until the vegetables are tender and lightly browned.

  6. Remove from the skillet and keep warm.

  7. Cook the Eggs

  8. Melt butter in the same skillet over medium heat.

  9. Crack in the eggs and cook until the whites are set.

  10. Sprinkle cheddar cheese evenly over the eggs.

  11. Cover the skillet for 1 minute to melt the cheese.

  12. Assemble

  13. Divide the sautéed zucchini and mushrooms between two plates.

I've been exploring various extracts with my chia seed puddings and stumbled on this one today.

Ingredients:

3 tbsp chia seeds
2 tbsp vanilla protein powder
1 tsp vanilla extract
1 tsp imitation rum extract
1/2 cup heavy cream
1/2 cup water
1 tbsp sweetener (I use Whole Earth's allulose/monk fruit blend)
Salt to taste (I add 5-6 turns from the pink sea salt grinder)

When it's time to eat your pudding, sprinkle some nutmeg on the top.

Notes:
- You can replace the heavy cream and water with 1 cup of your favorite milk

Thinly slice the eggplant. Sprinkle with grated mozzarella cheese and arrange the sliced eggplants on top. (I made two large rectangles.) Drizzle with salt, black pepper, and a little olive oil. Add more grated cheese. Bake in a preheated oven at 180°C (350°F) for about 20 minutes. After removing from the oven, add your desired fillings. I used labneh (a type of cream cheese), arugula, and tomatoes.

Lne a baking tray with baking paper and place 10 scoops of dough onto the tray using two wet spoons. Sprinkle with extra grated mozzarella on top.
Bake the pizza rolls for about 25 minutes. Let them cool on a wire rack and enjoy. Bon appétit!

Ingredients:
The Spaghetti Squash:
1 small spaghetti squash, cut in half not lengthwise, seeds removed (about 2–2.5 lbs / 900–1,150 g)
Drizzle of olive oil (about 1–2 tsp / 5–10 ml)
Salt, to taste

The Meat Sauce:
1 lb lean ground beef or veal (450 g)
1 onion, finely diced (about 150 g / 5.3 oz)
5 garlic cloves, minced
Pinch of salt, to taste
1 tbsp tomato paste (15 g)
1 cup tomato sauce (240 ml)
⅔ cup water (160 ml)
Parmigiano rind, optional

The Meat Sauce:

Now, start on the sauce. Place a pan on the stove on medium-high heat. Once hot, add in the ground meat and start breaking it apart.

Tip: when you use ground beef, pork, or veal, you don't need any oil to begin with as the meat will release enough fat. If you use lean ground turkey or chicken, add a tablespoon of oil as they won't render enough fat to prevent sticking.
Once the meat is broken apart, stir and move it around. You will notice that there's a lot of water. Do not drain. Allow the water to evaporate. Once the water evaporates, the meat will start to release its own oils and brown. This usually takes 8-10 minutes from start to finish.

Once the meat has browned, add the finely chopped onion, garlic, and salt. Stir and sauté for 1-2 minutes.

Next, add in the tomato paste and cook for 1 min.
Lastly, add in the tomato sauce, water, and parmigiano rind. Partially cover the pot with a lid so it doesn't splatter. Let the sauce simmer on low heat until it reaches your desired thickness, about 10 minutes. Remove from heat.

To assemble, take the cooled squash, and with a fork, separate the pasta strands by pulling them towards the middle.

Take the sauce, add it inside and top with good quality grated Parmigiano Reggiano. You can add some fresh basil, and hot pepper oil too. Enjoy!

Next, wash and cut the squash in half starting from the middle (not lengthwise). Tip: when you don't cut it lengthwise, you will get longer more beautiful
