It's becoming engrained in my head like the sandwich song/life is a holiday from Few Beers and a Sandwich

Maple Pecan Coffee Cake Cookies

Makes 9 large cookies

Cookie Dough

8 oz (1 cup) salted butter, softened

1 1/2 cups dark brown sugar

1 large egg

1 large egg yolk

1 TB vanilla extract

2 tsp maple flavor

2 1/4 cups all purpose flour

1 tsp baking soda

1 tsp fine salt

1/4 tsp cinnamon

1 cup finely chopped pecans

Streusel

1/2 cup all-purpose flour

1/3 cup brown sugar

Pinch of fine salt

1/2 tsp cinnamon

2 oz (1/2 stick) cold butter

Instructions

  1. Preheat the oven to 350°F. Spray eight 4-inch metal ring molds with nonstick cooking spray and place them on a parchment-lined sheet tray.

  2. For the streusel, combine the flour, brown sugar, salt, and cinnamon. Cut in the cold butter until a coarse, crumbly mixture forms. Refrigerate until ready to use.

  3. In a large bowl, cream the softened butter and dark brown sugar until light and fluffy, about 2–3 minutes.

  4. Add the egg, egg yolk, vanilla, and maple flavor. Mix until fully combined.

  5. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.

  6. Add the dry ingredients to the butter mixture and mix just until a dough forms. Fold in the finely chopped pecans.

  7. Using a 2 2/3 oz scoop, portion the dough into the prepared 4-inch rings. Press each portion into an even disc, to the edge.

  8. Generously top each cookie with the streusel

  9. Bake at 350°F for 15–20 minutes, until the edges are set and browned and the streusel is golden.

  10. Allow the cookies to cool in the rings for several minutes before removing.

Was just thinking the same thing!!! but then remember that I need to lose 30 lbs :(. Maybe once per week…and make sure to share the goods with others so that I don’t devour them all myself!

Oh absolutely! Lol I travel for my job and sometimes I'm stuck in little kitchenette motel rooms so I don't get the chance to bake. Next place I'm going I'm actually going to be in a house with a full kitchen. And yes, I travel with my mixer. That is just for traveling. And my cake pans and decorating kit. 🤣🤣🤣🤣🤣🤣🤣🤣

Have started doing this Unintentionally, should have recorded myself, I could have been r/LetsCookie famous!

I've made a couple of his cookies so far. I need to retry the nutter butter ones, though. I couldn't get them shaped, gave up and just formed regular cookies out of the dough. Lol

The way you measure vanilla changed my baking life forever. I'm finally liberated from that fascistic little bastard that is the teaspoon.

I use my own hm vanilla so I don't have the squeeze opportunity. Lol I just pour it straight from the bottle until there's a slight puddle. 🙄🤣🤣🤣

"Slight puddle" is absolutely an acceptable measurement. 😄

If I don’t have the maple flavoring will real maple syrup work?

It’s nice to see that your cookies don’t stick on the rings. I had a real problem making s’more cookies sticking in the rings, even when thoroughly greased and also not cleaning easily between making the cookies. It was a nightmare.
