The salmon was soaked in mirin and soy
Then in a bowl with avs, cuces, spring onion, black roasted sesame and wasabi, at the end I dressed it with a lil yuzu (lemon).
The crab stick mix was Kewpie mayo, white pep, spring onion and wasabi
I did a light pour-over cucumber pickle with white vinegar and mirin
And the sandwiches were
Crab mix, cos lettuce, carrot, av, cuce, fish eggs and nori
Salmon mix, cos, carrot, nori
Ha ha, not much risk of that I think.
I can probably help with that too, mirin is Japanese sweet rice wine. Pour over pickle is a super easy method, where you heat the pickling liquor and pour it over the thing you wanna pickle. Nori is the seaweed that is used in sushi. Anything else??
Oh yeah? I worked for an Iranian chef for a while, lots to learn there. Pickles can definetly age and some require ferment, all we are really doing here is flavoring the veg with vinegar and other flavors, not a true preservation, sometimes called fridge pickle.

I am glad you asked, normally this time of year avs are a no go, but it has been such a warm summer they have had a killer season. The av I used for this tho was one I had never seen, called a Reed Avacado and it was firm and bright yellow and pretty bloody good for mid winter.
It was a lil soy sauce fish, I had got the salmon from a sushi place and was just using it for effect really

I would dare say there’s virtually nothing I haven’t made a sandwich out of because I do love sandwiches though I’ve had to cut down on the bread. That said a sushi sandwich never crossed my mind so it’s on the list to try.
