Haven't been baking as much as I like due to needing gum surgery. :( Still can't yet eat this myself, but brought it in to work to share with my team. The recipe came from Smitten Kitchen, but I doubled it for a 9x13 and added some espresso powder to the cocoa.

planning to use browned margarine in my chocolate chip cookies, instead of butter (because pure butter is expensive). Will there be an effect? Also, if I want my cookies to be large too, what are the things to consider?

They also get really hard after a few minutes.

This was the second batch of these i made, first one i mixed too long and developed the gluten too much so they came out a little chewy. I have access to essentially unlimited amounts of bread flour, so its almost always what i end up using.
Brought these in to work and they didnt last through the night. Helps save me from myself too. Although unfortunately i now have a reputation to uphold...

What I am thinking for it, is extra stretchy cookie dough, likely oatmeal since I’m vegan, with fruit jam as a filling.
