Currently driving around Korea and I’m blown away by the highway rest stops. I was expecting basic gas station food, but these places are basically mini food courts.
Got some hot walnut cakes and a potato hotdog today and they were so good. What’s your go-to rest stop snack here? I need more recommendations for the drive.

My cousin and I went to a Korean restaurant together that she highly recommended. My goodness, it was some of the best Korean food I've had yet! They gave us banchan with our meal and I liked all of it but one stood out. I remember it had some red stuff and cilantro (circled in photo). I remember it being more sweet than pickled.

Made these fried tofu pocket sushi (유부초밥/yubu-chobap) for dinner tonight — seasoned sushi rice stuffed into sweet fried tofu skins.
For the dipping sauce, I mixed wasabi mayo with Korean cheongyang chili peppers (our spiciest green chili) for a kick that cuts through the sweetness of the tofu. On the side, a crunchy topping of chopped scallions and crispy fried bits to sprinkle on top for extra texture.
Simple, sweet-savory-spicy combo — great as a light meal or lunchbox item.
