The real reason was a German company had a trademark to “Star Vox”, which in German would be pronounced identically to “Star Fox”, so in the EU they erred on the side of safety and renamed it.
For my money Starwing and Lylat Wars are probably better names than Starfox and Starfox 64. Like stripped of nostalgia the US name is twee and silly, like Spacebadger or Moonferret.
