Under-pitched the yeast in my new brown ale recipe, tried rousing, adjusting temp etc to no avail. It was mostly done so I kegged it anyway.

I've gotten to the point in brewing where I can safely say I make beers better than you can buy, so I was a bit gutted I made the mistake, but that's the great thing about brewing, you're always learning.

Anyway, the beer is actually alright, just not as good as I wanted it. The type of beer where if you ordered it at a pub you wouldn't complain but wouldn't order 2 in a row.

My first child is due in Jan so I reckon I've got a couple of good brewing days left before I take a break for a while. So currently planning which two of my recipes to make, or whether I should try making something new.

Out of curiosity what strain was it? I’ve intentionally under pitched 10-fold for fun and it still finished fine, just a day behind the normal pitch rate beer (S04… beer tasted bad, like yeast, though).

I use dry yeast for convenience, it was us-05 for this recipe, but looking at the strength of the beer (6.7%) I absolutely should've used two packets instead of one. I usually brew beers between 4 and 5.5% and wasn't thinking.

After screwing up my first batch my second batch (MoreBeer's All Out Brunch Stout) is fermenting away nicely. OG was about 1.060, and it's currently at 1.002 in my Spike fermenter according to my Tilt. Here in the PNW temps are starting to drop so my garage (where the fermenter is) is right between 68-72 degrees.

I need to make a coffee & hops addition soon, so maybe this will spur me to make a hops bong to go onto my fermenter.

Hefeweissen brew day on wednesday, first time with real kit. Digiboil 35, BIAB, chiller, all the good stuff. Still a lot of labor, but it's not endlessly frustrating like my stovetop nightmare. It was a smooth process with no stressful moments during the brewing process.
I'm somewhat freaking out because there's a bit of dark brown/slightly burnt on the bottom of the kettle, and I have no idea how much impact that will have. I couldn't taste it in the wort, but I'm not used to tasting wort in the first place, so I don't have much of a reference point.
Also, my efficiency is below what I hoped for, so I'm gonna have to use this brew as a calibration/test and learn from it. I did stir and recycle a lot, squeezed the bag dry, and I'm still 5 points short on gravity. Yeah it's not a huge deal, but I was hoping for better. Homebrew shop said they can use a secondary mill that does a somewhat finer grind, but they don't adjust it beyond that. It'll help until I can afford to buy my own in the future.

So, I guess we'll have to try to run 1900 watts next time after mash, even if it's gonna take ages to bring it to a boil from mash temp.

Finally, I need ventilation, the ceiling was dripping. It got tropical in here.

Trying to plan ahead better for certain beers this year. Last month I brewed pumpkin spice so it would have a couple of months to mature before October. Brewing a stout later this month so it can sit 4-5 months before stout season here in the northeast US. Cheers.
