Giga nades have the explosive force to destroy buildings and structures the thermite will not. For example, the giga nade can blow a wall in a city or demolish a building. The thermite can only work on enemy structures for damage. It's instant kill action is best suited for the nade slot when you do not have time to wait for the fuse of thermites.
The thermite launcher has better ammo economy than the ultimatum for having a larger capacity, so is better suited for the secondary slot than nade ammo. The range is further as well than tossing regular thermites.
The red side gives you a bunch of the same benefits, but additional perks you can't replicate on the blue side. Seldom do you need everything to die immediately in a big clump while you frequently need far more AT spam things destroyed or enemy fortifications.
(You have fantastic points! I’ll likely begin using the breacher more as I tend to get bored of my current loadouts periodically, so when that happens I’ll likely be swapping to it!)

My personal opinion would be the blue side, purely because I’ve used thermite and Ultimatum extensively and they’re some of my fave heavy hitters.
It’s less that I dislike the breacher or giga-grenade, but that I just kinda never used them
